position Purpose
the Hygiene, Health & Safety Manager is Responsible to Promote Hygiene Standards Within the Hotel and Ensure that Local Laws and Company Standards are Adhered To.
essential Functions
carry Out Weekly Food Safety Inspections in Kitchens and F&b Outlets, Receiving Area, Stores, and Communicate the Findings to the Relevant Departments for Actions.
carry Out Daily Personal Hygiene Spot Checks.
participate as An Haccp Team Member in the Food Safety Internal Audits, Prepare the Food Safety Internal Audit Map and Communicate It to the Relevant Departments for Actions.
follow Up On the Actions Related to the Findings and Non-conformities Noted During the Audits and Inspections.
ensure that the Haccp Records for Delivery, Sanitation of Fruits and Vegetables, Storage, Temperature Control for Cooking/reheating/blast Chilling/hot Holding/display/cold Storage/dishwashing/outside Catering Etc. are Completed On Time By the Concerned Associates, Kept On File, Reviewed and Signed.
ensure that Food/water/ice Samples are Tested On a Monthly Basis By An Accredited Third-party Laboratory and Reports are Kept On File.
ensure that Food Samples are Collected On a Daily Basis from the Buffets and Functions for 20 People or Above.
carry Out all Food Labeling Check.
monitor Storage and Stock Rotation of all Food, Beverages and Food Disposable in Storage Area, in Outlets, Kitchen, Ba
