JOB SUMMARY

• Accountable for overall success of the daily kitchen operations.

• Leads the culinary staff and manages all food related functions.

• Exhibits advanced culinary talent including a deep knowledge of best practices.

• Works to continually improve food quality, presentation and guest experience.

• Keeps track of operational costs for kitchen.

• Supervises all kitchen areas to ensure a consistent, high quality product is produced

• Responsible for guiding and developing staff.

• Must ensure sanitation and food standards are achieved.

CANDIDATE PROFILE

Education and Experience

• 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major;

• 5 years experience as a Head Chef.

• 5 years experience as a sous chef in high end restaurants or abroad.

• Practical knowledge of various computer programs (MS Office, restaurant management software, POS)

CORE WORK ACTIVITIES

Ensuring Culinary Standards and Responsibilities are Met

• Prepares and cooks food based on menus and can implement special requests as needed and approved.

• Reviews and adjust systems and procedures in the kitchen to ensure their effectiveness.

• Can develops, designs, or creates new menus and recipes based on standards or artistic contributions.

• Highly knowledgeable in the areas of:

o High quality food products

o Food presentations

o Flavour

• Ensures compliance with food handling and sanitation standards.

• Ensures compliance with all applicable laws and regulations.

• Follows proper handling and right temperature of all food products.

• Ensures a safe working environment inside the kitchen.

• Supervises kitchen shift operations.

• Maintains purchasing, receiving and food storage standards.

• Checks the quality of raw and cooked food products to ensure that standards are
