Designation: Commis I Chef

Salary: 140,000 - 200,000 LPA (Fixed) + 40% Incentives (Variable)

Roles & Responsibilities:

As a Commis, you are expected to comply with the Food Hygiene Regulations and develop a policy for the organization.

Assist management in hiring, training, scheduling, evaluating, counselling, motivating, and coaching employees.

Ensure constant innovation and new product development by working with the founder.

Create Standard Operating Procedures (SOPs) & Checklists by working with the founder.

Assist management in developing the Procurement and Storage Process.

Assist management in inculcating Industry Standard Techniques and Processes.

Assist management in identifying the required tools & equipment.

Help management develops the Go-to-Market Strategy (GMS).

Ensure the highest standards and consistent quality in the daily preparation and keep up to date with new products, recipes, and preparation techniques.

Control food stocks and food costs and set up a benchmark & monitoring process.

Ensure the proper sanitation and cleanliness of the kitchen, storage, and outlet.

Be in charge of backend & frontend food preparation & support operations.

Create kitchen equipment Operational, Cleaning, Safety, and Maintenance Manuals.

Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklists.

Be responsible for maintaining food logs and daily Internal Process Audits.

Plan and execute Continuous Product and Process Improvements with the founder.

Develop a Food Testing and Quality Check monitoring system to ensure standardisation.

Develop a Feedback Collection & Improvements Plan and execute it with the founder.

Design and conduct all training programs and develop a Learning Management System (LMS) with the founder.

You would need to build, operate, and monitor the cleaning schedules for the backend & frontend facilities.
